What a 5 inch cake collar is for

A 5 inch cake collar is the tall option. One strip lines a ring or springform pan high enough for a tall layered cake, a deep mousse cake or a trifle-style dessert, with no second strip to join. This roll is 5 in (12.7 cm) wide and 32.8 ft (10 m) long, in clear, food-grade PET that you cut to length with scissors.

One tall strip or two short ones?

With narrower acetate, bakers build tall ring cakes with two strips: one lines the ring, and a second is tucked between the ring and the first strip to raise the wall as the layers go up. It works, but the overlap can leave a faint line on the cake and the second strip can shift. A single 5 in strip gives one continuous wall from base to top.

If most of your desserts are shorter, the 3 in acetate roll or the 4 in cake collar roll leaves less to trim.

How to line a springform pan or cake ring

  1. Work out the length: diameter times 3.14, plus 1 to 2 in of overlap. A 9 in springform needs about 30 in; a 6 in ring about 20 in.
  2. Cut the strip and set it inside the pan's side wall so it curves the same way as the ring. The roll's curl then presses it outward against the metal.
  3. Tape the seam on the face that won't touch the dessert.
  4. Build the layers, cover, and chill until set.
  5. Open the springform clasp or lift the ring, then peel the acetate off in one slow, steady pull.

About the natural roll curl

The film ships on a roll, so a cut strip keeps curling until something holds it: a ring, a pan or the dessert itself. That is normal, and inside a ring it works in your favor. It gives flexible side support rather than acting as a rigid mold. When you need a flat strip for chocolate work, tape the corners to the counter while you spread.

Cut it down for mini cake collars

A wide roll can stand in for narrow ones. Cut a strip lengthwise along a ruler with a craft knife or rotary cutter, and one length becomes a 3 in band plus a 2 in band. Narrow bands make mini cake collars for small rings, individual mousse cups or petit fours.

More ways to use the roll

  • Chocolate bands: spread tempered chocolate on a strip, wrap it around a chilled cake and peel once set.
  • Dessert bag inserts: a strip inside a clear treat bag keeps a slice or bar upright.
  • Trifles and layered cups: a collar holds neat, visible layers while they set.
  • Pastry decorating strips for clean edges on chilled work.

Keep it to cold work: chilled, frozen or room-temperature desserts, not the oven. More tools are in our kitchen and baking section.

Frequently asked questions

What can I make with a 5 inch cake collar?

Tall layered cakes built in a ring, deep mousse cakes, cheesecakes in a springform pan, trifles and chocolate bands. The 5 in width covers desserts up to about 4.5 in tall with one strip.

Will it fit inside a springform pan?

Yes. Cut a strip about 3.14 times the pan's diameter plus 1 to 2 in, about 30 in for a 9 in pan, and set it against the side wall before you fill.

Is it food grade?

Yes. The strips are food-grade PET, made to touch cakes, mousse and chocolate directly.

Why does the strip curl after I cut it?

It comes on a roll, so cut pieces keep some curl until a ring, pan or dessert holds them. Inside a ring that curl helps the strip sit flat against the wall.

Can I cut it into mini cake collars?

Yes. Slice a strip lengthwise against a ruler with a craft knife or rotary cutter. A 5 in strip splits neatly into a 3 in and a 2 in band for small rings and petit fours.

Can I bake in an acetate collar?

No. Acetate collars are for cold work. Bake and cool the cake first, then build or wrap it in the collar and chill it to set.

How many cakes will one roll do?

It depends on ring size. With about 1.5 in of overlap, a 32.8 ft roll gives about 19 strips for 6 in rings, about 14 for 8 in rings and about 13 for 9 in springform pans.
