  • Cut with scissors to fit round, square or shaped rings

Is a 4 inch cake collar the right height?

A 4 inch cake collar fits desserts that finish between about 3 and 4 in tall: a three-layer cake built in a ring, a tall mousse cake, or a cheesecake with a deep topping. This roll is 4 in (10.2 cm) wide and 32.8 ft (10 m) long, made from clear, food-grade PET 125 microns thick, and you cut each strip to length.

Compared with a 3 in acetate collar, the extra inch gives you headroom. The wall can stand a little above the filling, so a final layer of cream, fruit gel or ganache sets level with a clean top edge.

Which collar width fits your dessert?

Finished dessert heightCollar widthTypical desserts
Up to about 2.5 in3 inCheesecake, single mousse layer, slices
About 2.5 to 3.5 in4 inThree-layer ring cake, entremet with an insert
About 3.5 to 4.5 in5 inTall layered cake, deep trifle-style dessert
Taller than 4.5 inTwo overlapping stripsExtra-tall showpiece cakes

A common rule of thumb is to pick a collar at least half an inch taller than the dessert you plan to build. For the tallest builds, a 5 in acetate roll saves you from joining two strips.

How to build a layer cake inside a 4 in collar

  1. Bake and fully cool the layers, then trim them to the size of your ring.
  2. Cut a strip about 3.14 times the ring diameter plus 1 to 2 in. For an 8 in ring that is about 27 in, so one roll gives about 14 strips.
  3. Place the ring on a cake board, slide the strip inside and tape the seam on the side that won't touch the cake.
  4. Stack cake, filling and cake, pressing each layer gently so it meets the acetate all the way around.
  5. Chill until firm, which for mousse fillings usually means several hours or overnight, then lift the ring and peel the collar.

Can you wash and reuse acetate cake strips?

Yes. Strips from this roll can be washed and stored for another project. Wash them by hand in warm, soapy water rather than hot, dry them flat with a soft cloth, and store them flat or loosely rolled. Retire a strip once it is creased or scratched, because those marks print onto the cake's sides.

Tiers, classes and transport

Cutting every tier's collar from the same 4 in roll keeps tier heights consistent on a stacked cake. Because the film is clear, it also works well for teaching: students can watch each layer line up through the wall as they build. Leaving the collar on until the cake reaches the table protects the sides on the way.

What it won't do

Acetate collars are for chilled and cold-set desserts, not for baking in the oven. They are also different from the fabric bake-even strips that wrap a pan while a cake bakes. Browse more kitchen and baking tools.

Frequently asked questions

How long should I cut a 4 inch collar for an 8 inch cake?

About 27 in. An 8 in ring's circumference is about 25.1 in, and 1 to 2 in of overlap lets you tape the seam. One 32.8 ft roll yields about 14 strips that length.

Are these the same as cake strips for even baking?

No. Bake-even strips are fabric bands that wrap the outside of a pan in the oven. Acetate collars are for cold work: you build or wrap a cooled or chilled dessert in them, and they must not go in the oven.

Can I reuse the acetate collars?

Yes. Wash strips by hand in warm, soapy water, dry them flat and store them for the next project. Replace any strip that is creased or scratched, since marks show on the cake.

How thick is the film?

125 microns, or about 4.9 mil. It bends around a ring easily and holds a straight wall while a mousse or layer cake chills.

Is it food grade?

Yes. The roll is food-grade PET, suitable for direct contact with cakes, mousse and other desserts.

Will it work in a square cake ring?

Yes. The film follows round, square and freeform rings. At sharp corners it bends with a slight curve rather than a crisp fold.

How long should a mousse cake chill before I remove the collar?

As a rule of thumb, at least several hours and often overnight, until the mousse is firm all the way through. Peel the collar slowly while the cake is still cold.
