A 3 in (7.6 cm) wide, 32.8 ft (10 m) roll of clear, food-grade PET acetate, 125 microns thick, that you cut into strips to line cake and mousse rings for chilled desserts up to about 3 in tall.

  • 3 in (7.6 cm) wide: for chilled desserts up to about 3 in tall
  • 32.8 ft (10 m) roll: about 19 strips for 6 in cake rings
  • 125 micron food-grade PET: bends around a ring, holds a straight wall
  • Clear film lets you check each layer as you build
  • Smooth face peels away cleanly once the dessert has set
  • Cold work only: not heat-resistant, never for the oven

What is a 3 inch cake collar?

A 3 inch cake collar is a strip of clear acetate that lines a cake or mousse ring, or wraps a chilled cake, so the sides set straight and smooth. This roll is 3 in (7.6 cm) wide and 32.8 ft (10 m) long, made of food-grade PET film 125 microns thick. You cut each strip to the length your ring needs.

A 3 in wall suits desserts that finish at or just under 3 in tall: a single-layer mousse cake, a cheesecake, an entremet in a standard ring, or cut cake slices that need a band to keep their shape. If your cakes usually stand taller, the 4 in acetate collar roll or the 5 in cake collar roll gives you more wall.

How to line a cake ring with acetate

  1. Measure the ring's diameter and multiply by 3.14 to get the circumference. Add 1 to 2 in so the ends overlap.
  2. Cut the strip with sharp scissors, keeping the cut square to the edge.
  3. Set the ring on a lined board or tray, curl the strip inside and let it spring flat against the wall. The roll's natural curve helps.
  4. Fix the loose end with a small piece of tape on the side that won't touch the dessert.
  5. Fill and chill until fully set, then lift off the ring and peel the acetate away slowly.

How many strips do you get from one roll?

Ring diameterStrip length (with overlap)Strips per 32.8 ft roll
4 in (10 cm)about 14 inabout 28
6 in (15 cm)about 20 inabout 19
8 in (20 cm)about 27 inabout 14
10 in (25 cm)about 33 inabout 11

These counts assume one strip per dessert and roughly 1.5 in of overlap. Bands for single slices or petit fours use far less, so the roll stretches further if you make small desserts.

Need a 2 inch collar instead?

For short cheesecakes, bars or slices, cut a 3 in strip down lengthwise. Mark the width along a metal ruler and cut with a craft knife or rotary cutter on a cutting mat; long scissor cuts tend to wander. Keep the leftover 1 in band for chocolate decorations.

Chocolate work and other uses

The smooth face gives set chocolate a clean, glossy surface. Spread tempered chocolate thinly over a strip, wait until it just starts to firm, wrap it around a chilled cake, and peel the film once the chocolate has hardened. Strips also guard the sides of a decorated cake in its box.

What this collar is not for

Acetate is for cold work. This roll is not heat-resistant, so never use it in the oven or against a hot pan; bake and cool the cake first, then collar it. It is also not a bake-even cake strip, the kind that wraps the outside of a pan during baking. For more tools, browse our kitchen and baking supplies.

Frequently asked questions

What length of cake collar do I need for a 6 inch cake?

Cut a strip about 20 in long. A 6 in ring's circumference is about 18.9 in, and the extra inch or so lets the ends overlap. One 32.8 ft roll gives about 19 strips that size.

How thick is this acetate?

125 microns, which is 0.125 mm or about 4.9 mil. That is firm enough to hold a mousse wall inside a ring and still easy to cut with scissors.

Is the acetate food grade?

Yes. The roll is food-grade PET film, made for direct contact with cakes, mousse and chocolate.

Can I bake a cake inside an acetate collar?

No. The film is not heat-resistant and must not go in the oven. Bake the cake, let it cool completely, then build or wrap it with the collar and chill.

Can I make 2 inch cake collars from this roll?

Yes. Cut a strip down lengthwise against a ruler with a craft knife or rotary cutter. Scissors work too, but long cuts are harder to keep straight.

Do I need tape to hold the collar?

Inside a ring, the ring holds the strip, but a small piece of tape on the seam stops it springing open while you fill. When wrapping the outside of a cake, put the tape on the outer face so it never touches food.

How do I take the collar off without marking the cake?

Chill until the dessert is firm all the way through, often several hours or overnight for mousse. Lift off the ring, find the seam and peel the acetate back slowly, keeping it close to the cake's surface.
